100% of the content of your milk came out of a cow, unless labelled otherwise.
Some milk is homogenised (they take the fat out then mix it back in at a fixed rate) some is whole.
As MCN says, he cows diet can affect flavour. Feed cows garlick and you get garlicky milk. They pretty much stopped them feeding dairy cows turnips for this exact reason. Supermarket milk is likely to be a blend of many different dairies. Locally produced stuff can come from a single herd and the fat, sugar and protein content can vary across the year.
Heat treating has an affect on the flavour. Even a few degrees diffence in the pasteurisation process can alter the flavour. You'll have seen how different UHT milk tastes compared to fresh.
Freshness will have an effect too. If it's taken longer to get to you, it'll start to sour.
On the subject of semi-skimmed. Why the hell would you drink it?
Whole milk is 4%-ish fat. Semi-skimmed is 2%-ish fat.
The main benefit from drinking milk is it is a good source of fat-soluable vitamins (D in particular and Brits are chronically deficient in vitamin D, especially in winter). So for your 2% reduction in fat, you've got a 50% reduction in fat soluable vitamins.
A massive reduction in nutritional value for a negligable reduction in calorific content.
Only good reason I can think of to drink semi-skimmed is if you preferr the taste. ____________________ “Rule one: Always stick around for one more drink. That's when things happen. That's when you find out everything you want to know.”

DONT YOU JUDGE ME !!!!
Fact Is I dont drink milk except in tea, only a little then
wouldn't drink a glass of it and will happily drink tea sans milk
(No sugar either yuk!)
But I maintain the local shop milk often tastes 'funny'
and was hoping for a BCF conspiracy theory to explain it.
Gay cows, cut with pig/sheep/goat/rat milk, aliens, pschyoactive drugs to keep the hoi polloi quiet,
milk sourced from johnny foreigner sort of thing. ____________________ bikers smell of wee |

+1 for goat milk tasting of goat/sheeps. It smells of it too. And who licks a feckin' goat apart from another goat?
The 'boys' on the rigs in the middle east are fanatical (I know) about camel milk. It is a delicacy.
They'd take the car and disappear for an hour every morning to find a near-by Bedouin camel herder and buy a gallon of milk from them.
I never touched the stuff as the animals are not really vetted nor is the milk pasteurised. And although I never heard (no pun) of anyone coming to harm from drinking it there is probably a risk from the many things we remove from milk to make it safe.
One of the company men used to drink it raw. Probably in an effort to get down with the Saudi crew . He was a bit of a Prize Phanny though.
I do not use any adulterated milk made-up with water. It should be made illegal on a 'weights and measure' basis.
I use whole UHT in the middle east as there are very few dairy cattle due to climate and again, the process from cow to carton is not that safe.
I also use evaporated milk (Carnation) but only in dire emergency. That is made from milk powder that is re-hydrated with purified water then canned.
I was buying UHT from a supermarket in Nigeria but when I opened it and poured it over my Froasties I could taste soap.
I went back to the store and asked for different cartons. The manager took me into the store room to pick my own milk. I found it stacked next to the soap powder.
I told him that was why it tasted like soap. He said, 'I don't know as I don't drink milk.'
