I've put a straight through exhaust onto the injected model and blocked off the breather pipe..the bike runs perfectly fine and only really smells when I put my nose near the exhaust, or if I pit my hand over the hole and smell.. picture below of the spark plug it's a pretty old spark plug as well, but does the spark plug look normal? Any help would be appreciated thanks!

Workshop section is a better place for this sort of question.

Got a picture of what you've blocked off?

Was there an oxygen sensor in the exhaust? Is it in the new one?

Sorry no I don't have any pictures at the moment, it's the pipe that comes from near the seat that would attach to the exhaust. But as this exhaust doesn't have the pipe I was advised to block it off.. does the spark plug look normal?

Plug looks fine, but but if worried I would fit a new plug and try some plug chops.
Could it just be your running with the choke on? Take it for a ride and see what it smells like once it's fully warmed up.

As Rogerborg said, is or was there an Oxygen sensor fitted before and is there now?
