Hi new this this so hope someone can help

I have a Yamaha DTRE 125 55 plate
I've no long had it and was fine when I took it out for test run however now it's been delivered and I've taken it out the red light has come on on the temperature gauge meaning it's overheating

It's not losing water
It's not boiling in the expansion tank
The thermostat is working
The water pump is working
There's no steam and the engine and rad are hot which I think is normal
It's has not long had a top end rebuild
The oil is not creamy

One other problem once it's warm and the choke is of it wont tick over and stalls if no revs given it will only start again with choke on

Any ideas

Is it overheating while riding or just at a standstill? Is the fan working?

im still waiting for the thermo unit to turn up to see if this is faulty

With the bike not ticking over
I played around with the tick over then it wouldn't start
I changed the plug and it started first time so I think the fuel mixture is to rich is there an easy way to sort this
