I was wondering if there is anything I can do to my Sinnis Trackstar 125 to squeeze a little more performance out of it (derestricting, tuning, upgrade parts etc.) I've tried googling it but had no luck.

If it's fast enough to keep up with traffic, don't bother. It's a 125, it'll be slow. I'd wait, do your test and buy a bigger bike for more power.

It's got a Suzuki GS/GN/EN125 copy-engine so anything that applies to the Suzuki will apply to the Sinnis.

You could try:

Maintenance:
Get the chain tension and tyre pressures dialled in, clean the air filter and clean and gap the plug. Keep the oil good and fresh.

Tuning:
De-cat the exhaust.
Fit a cone filter.
Rejet to suit.
Skim the head to increase compression.
Try a "racing" CDI to advance the spark.
Fit a brand name coil, lead and spark plug.

All of which might buy you a fraction of a horsepower and maybe a couple of mph, with a favourable following wind and enough self belief.

The reality is that it's a low compression 125, and there's no way to transform it.

If you want to get cheeky, you could fit a GS125 150cc kit. eBay will provide many options, with dimensions so that you can check if they'll fit.

Maintain your chain, check the brakes aren't binding and put your pennies in your a2/a licence fund and big bike fund. It'll cost a fuckload to make enough of a difference to be seen anywhere else than a dyno printout that says your bike makes however much more power the guy with the dyno charged you for.

Amusingly, I've just learned that the "performance" CDI sold in the stage 1 kit by Hitchcocks for the Electra is...

...the one off a GS125 Smile

i did a 150cc kit for both my dr125 and my partners little brothers sinnis cafe

the results were great, i did a how to video here
https://www.youtube.com/watch?v=TQEzt5smYw4

you dont really get any more top end speed with out changing the gearing, but you get a pant load extra torque

well worth the time, effort and the little cash it costs to do,

i reckon you'd be hard pressed to get anymore performance for the buck in any other way

Suzuki DR200S engine would be the easy or best way. Or you'd make a GN250cc engine fit if you really wanted to.
Hell even a DR350 lump might go in with some custom mounts and frame rail chopping etc.

Buy a bigger bike to tune would be the best way though.
