When ever it rains, my bike coughs an farts, an generally runs like a bag of spanners (on 3 cylinders normally)

Coils have been replaced with 2nd hand genuines. The ones fitted previous had corroded, an trimming back the leads to good copper made them too short Shocked

Is there any quick an dirty tests to do, or is it a case of stripping it back an looking for iffy wires/ air leaks?

Get some holts damp start autoplast and hose down the loom, coils, leads.

I can't remember how exposed the Bandit plugs are to the weather but check if there's a little lightning bolt of spark shooting down the outside of your plugs when it's running. I've had bikes where the spark would rather jump down the outside of the plug at the slightest hint of moisture. I've usually sorted this by making sure the outside of the plug is clean of road grud and by making some kind of shroud around the plug cap to keep the rain off. The plug caps themselves might be the culprit so try changing them for some that tightly cover the plug when connected.

My current bike used to be quite temperamentl in the wet until I fitted an old coil off a car which seems to throw a lot more spark and now it's fine, so perhaps more powerful coils or something?

Try WD40, spray it anywhere you might think you dont want water to be.

I believe they have recessed but exposed plug holes that fill with water. There's supposed to be drain holes in them but they get clogged.

Yeah there is drain holes, but as far as i can see (its dark an murky) its full of all sorts of crap.

might get me some carb cleaner an blast em out

As "lingeringstink" said, make sure your plug leads aren't "tracking"!
Run the bike in the dark and check there are no sparks jumping from the plug leads to the engine!
If there are I'd invest in new plug leads, there are products that coat the leads in insulating goop, but you'd end up in the same situation eventually, IMO.

Have you tried swapping the plugs over and putting a known good 'un in place of the bad 'un?
I had a problem on a CBR600, turned out to be one dodgy plug, there were no internal or external signs of damage, but it had given up the ghost, replaced it and the problem disappeared!
