When I went to take the fairing off the front of the (excitingly new) CB500S to change the spark plugs and ran into a problem.

The Haynes says to disconnect the indicators, however, the connection inside the fairing doesn't look to be something that can be disconnected (looks like a bullet connector to me).

(Apologies for Potato pic, phone would not focus on the connectors for love nor money).

The wire from there goes straight into the loom. Same on the LHS (though there is a block connector there shared with a wire that goes into the bottom part of the head light).

Am I missing something obvious, or did the last owner use a crimp connector where they had no business doing so?

From what I remember (been a while since I worked on either of my CB500's) they look factory. They are a bullet connector on one side and the socket on the other. They will pull apart but can be difficult if they have been squashed at any point.

Look carefully and you can see which is the male (bullet) and female (socket) You can then use long-nosed pliers if necessary (as I had to with my 33 year old harness!) to pull them apart, gripping the bullet part. Try not to pull the wire as it may come out of the connector. The OEM type of connectors are available from ebay at very reasonable cost, and from UK suppliers too! They come together with the clever little plastic sleeves.

Also try to spray wd40 up the inside and see if that plasic sleeves slides up and away as well.
