So I'm 32 and from the United Kingdom and I've recently been getting urges to learn to ride.

Find a local rider training school (If you put your location on your profile then someone here may even recommend a good one in your area).
Then go and talk to them.
When you've done your CBT and enjoyed it then decide what the next step is and when. You may scare yourself senseless and walk away (many do).
Let them tell you the options as they're the ones that have seen you riding.

A 500 or 650 (most 600 are a bit more sporty) will make a decent commuter bike but depending on your journey, a 250 or even a big scooter may be even better.
IMO 125s are just too small for anything more than cross-town commuting but there are people that cross continents on smaller bikes, so you may feel different...
Once you've done your CBT and ridden a larger bike then you'll probably appreciate that bigger doesn't automatically mean more difficult to ride.
The larger bikes IMO are easier in most situations but more difficult to manhandle in really heavy stationary traffic.
Good luck.
