Then I strongly suggest you don't. Any tyre fitter who doesn't remove the tyre valve/cut off the valve and let a tyre deflate before breaking the bead is a serious incident waiting to happen.

Breaking the bead without deflating the tyre would push the sidewall way beyond the intended working pressure with the bead breaker blade creating a several inches long potential point of failure which if it did fail could cause the tyre to come apart like a zipper potentially shooting out steel and/or kevlar wires as well as pieces of rubber at high velocity.

I'm surprised that your tyre fitter allows you to stand next to him, first fitting is a common time of failure.
