Spain as a touristic destination has a high/medium/low season pricing model. So expect to pay much more during June/July/August, Eastern, Christmas and so on. Also they are smarting up with UK/Germany school breaks and bank holidays so pricing reflects that too.

January will be cheaper is you travel in that month, but not really if you plan on going in July.

I sailed Santander Plymouth yesterday ie end of May.
I booked it 3 days before the sailing and paid £189 one way, no cabin.
