1.5k for a set of knives is realistically beyond the average person's budget

£1.5k Laughing

You can buy a small chef's knife, a larger chef's knive and a paring knife for £150. You don't need anything more than that.

That makes them much more reasonable, the ($)1.5 k number was the first thing I saw on googlefu for a set of 9 with a wooden block! Might want to avoid that seller! Laughing

Globals are overrated. The handles can also be counter-intuitive and not comfortable for a lot of people.

I would recommend looking at what knives you actually use, what purpose, and get Victorianox, Wusthof of F Dick. I currently use Dick for most things, but if you only need a chefs knife, bread knife, and a paring and filleting one, then just pick ones you like. Before you buy, go to Lakeland or similar and hold them, ordering expensive knives online can lead you to get ones that aren't the right weight for you, or the handle doesn't fit.

https://www.amazon.co.uk/Wusthof-CLASSIC-Knife-set-9751/dp/B0000DJZME/ref=sr_1_9?ie=UTF8&qid=1521292626&sr=8-9&keywords=wusthof

If I needed a home set, it would be one of these and a magnetic wall strip.

Make your own. Use some leaf spring steel you can find in any gutter near an industrial site.

I have never done this and im just suggesting it because I wish I had a forge so I could. Sad. Crying or Very sad

A couple of decades back, I bought a little antler-handled mild steel knife from an authenti-tinker for a lark. And despite having a rack full of various gifted techno-cutlery, it's still my daily go-to cooking utensil.

It's blackened with patina, the tip has corroded and been worked off, and it absolutely needs sharpening before and during use. But the edge that you can put on it beats anything else I've used, .

That's because its not stainless. The chromium in stainless blades is what prevents getting a really sharp edge as the chromium messes up the edge creating brittle spots where particles of chrome gather and then split off leaving pits and jagged edges.

Of course what's really needed for sharpness is Obsidian. It's a kind of flint like stone. Reputedly capable of splitting a substance at the molecular level. Expensive though. A medical Obsidian scalpel will set you back £100. So you can imagine what an Obsidian cooks knife would cost. Shocked

I do most of the cooking in the house - another vote for Global. We have a set of 5 ... but the one i use the most is the 8" Chefs knife, it's an excellent allrounder.

We've got a couple of sets of knives.

Set 1 are Sabatier, they're ok but you do need a steel as they need sharpening, fairly regularly.
A word of warning though, don't put 'em in the dishwasher, ours have rubberised type handles and they have delaminated.

Set 2 are ProCook Professional X50's, these are very nice knives, they feel very solid and have a bit of weight behind them, they do not flex at all.
They are extremely sharp, I've been using them for 18 months and haven't sharpened them yet, they will still take your finger off effortlessly! Shocked
Worth every penny, the best knives I've ever owned!

I went with these in the end, I got 2 Chefs Knives a Paring Knife, Santoku Knife and a sharpening steel for £70. They seem like great quality the handles are lovely to hold and they are sharp. Thumbs Up

Too late, but I've a 25cm Robert Welch Chef's knife I'm very happy with:

At some point will get a silly-expensive sharpening system to keep it pointy.

This is a 15 degree knife, so needs a bit of care taking with it.

Also been impressed by a 10" Victorinox deep Fibrox handle Chef's Knife - great value.
