Well i bought a bike (logbook crap is still being sorted out) and its not taxed. i have the following for it:
Liecence
V5
Insurance certificate
MOT certificate
All it needs now is a tax disk. However i have no idea is the bike is declaired SORN or if the last tax disk was just lost. The last time i taxed a bike i was sent a V11 form to inform me that the tax was about to expire. This time i have no forms etc to fill in.
So do i need to contact the DVLA? obtain forms? or just go intot he post office, give them my documents and pay them money?

Yup, you don't need the reminder and I don't believe it matters if it's declared SORN as buying the tax will correct that.
Just take your documents as listed, though your license isn't needed, to your nearest Post Office which issues road tax and pay the amount needed. That's the way I've always done mine as I never seem to get a reminder through the post.
