Middle, you used to be able to buy bacon called middle - like a cross between back and streaky. Of course smoked.. oh and brown sauce, red is only for sausage sandwiches.

You've fallen at the first hurdle, the idea is not to hide it, but slip it into the bread bin next to the cardboard loaf of dread.
As Stink said, the only real difference between basic white and brown is the colour of the flour, if you want to go mental, check out the sugar content of the various white loaves and buy the one with the lowest, but assuming you aren't troughing a loaf every day, white bread isn't going to kill you, despite what your missus might think.
BTW, I've also had a couple of serious health scares in the past few years, but I refuse to be a complete martyr to them; I look after myself a bit better these days, but I'm still eating white bread, I'm still here and my weight and cholesterol levels are dropping. ____________________ Things get better with age; I'm close to being magnificent........
