Had half a tray of baked root-veg that I didn't finish the other night.
So I fried it all up with a couple of rashers of bacon, chucked in a couple of pints of water and left it to simmer half the afternoon.
Bunged in a tin of drained chickpeas and bashed them about a bit to give it a bit of thickness, simmered it half an hour more.
Poured the resulting soup over a couple more crispy strips of bacon, chopped up and just a sprinkle of salt (cos I rarely season during cooking).
Well nice. ____________________ Not nearly as interesting in real life. |

I just made lamb curry with black pepper, cumin seed, cardamon pod, grated nutmeg, clove nubs, cinamon bark, chilli powder, fresh ginger, syrup and garlic oil all heated in ghee, used to saute lamb shoulder steaks then put in the oven and slow cooked for 3 hours with tinned mushroom, homemade bullion and chopped green beans.
Once it was done I stirred in a big handful of spinnach leaves, saffron water, lemon juice and rosewater and served on lemon rice.
Mrs stinkwheel says it was nice. I spent the intervening 4 hours getting pished so I'm leaving to to tomorrow because I'll not appreciate it now ____________________ “Rule one: Always stick around for one more drink. That's when things happen. That's when you find out everything you want to know.”

I've been making Vietnamese Pho - the cheat way. Using beef stock rather than boiling down beef bones for hours and hours and hours. Still need about 4 hours to get it right, but it's more doable at home than the traditional method.

Done it twice now and it's pretty fool-proof. Lovely it is too, with a fresh handful of mint, coriander and spring onion, sprinkling in some birds eye chillies for a bit of punch |

I made a proper dirty keto thing today: it was "just" a bacon and cheese omelette, basically. Although I did properly fry the omelette, keeping the wok up on fairly high heat to cook it through.
But then ...!
... once I took out the omelette onto the plate (cos it had to wait the obligatory few minutes for the cheesy inside to set properly) ... so while I was waiting:
I sliced a handful of baby plum tomatoes, melted a knob of butter in the bottom of the wok where there was all that brown bacony gunge burnt on - threw the sliced toms and another handful more of whole ones, into the frying pan on high gas.
They sizzled for a bit, I shook 'em around, pierced the whole ones with a pointy knife so the juice came out, gave it two minutes on high heat, swooshing it all about just off the flame, and then I did the deglazing thing with half a wineglass of water.
Poured it over the omelette.
Amazing.
Slightly tomatoey and bacony flavour juice and a nice pile of soft fried baby plum tomatoes on the top.
The simplest food! Incredibly flavoursome.
Dutty keto. Dutty!
Shame I didn't have a glass of wine to have with it. ____________________ Not nearly as interesting in real life. |

Had some leftover mushrooms at the weekend so did fried mushrooms on cheese-on-toast (Red Leicester). Nicer than expected
Also did a Japanese Ramen for lunch. Quite easy in the grand scheme of things. Make some chicken stock, then pour in soy sauce, Worcester sauce, ginger, garlic and sugar and let it meld for a bit whilst you knock up a couple of really soft boiled eggs, and some wheat noodles in another pan whilst steaming some Chinese leaf or any other veg you fancy with it. Fry some thinly sliced chicken in sesame oil, stick it all in bowls and pour over the strained stock before chucking in some spring onions and shredded nori. |

Made Gong Bao Chicken last night. Leftovers this morning made for a weird breakfast.

We made lots of dumplings over CNY and have a load of the wrapping dough left over, if it hasn't totally dried out I'm going to make pork and ginger dumplings later. |
