I am after a stainless steel countersunk allen key bolt size M10 x 60mm with a pitch of 1.25

I just don't understand why these bolts don't seem to exist, I cannot find them anywhere.

Usually because of bolt size, you prolly not find them on Ebay but check specialist sites like this

It's pretty oddball.

I'd question if the thin flange you're left with on the screw head would cope with the load of the fastening torque.

What's the application?

Or whether you'd get the appropriate torque with the ~6mm allen key, I'd wager.
