My honda fes125 2008 s wing scooter has already had 2 new metal head gasket and i am now putting on a 3rd. The head is straight and I really don't know why the head gasket are failing.
Any advice would be great

Hi, how do you know that the head is straight? Also is the engine block surface straight? Are you tightening the head bolts as spec?
Q, which part of the gasket is failing and is it in the same place?

We have put a ruler along it and it is perfect. When we remove the gasket it would seem that there is some black on the gasket that just looks like it's failed. But that maybe because it's been tighten down

Tightening your head bolts will not cause the gasket to blacken; the black is most likely from a combustion leak. Checking head deck warpage with a ruler won't cut it, you need a precision straight edge. Check the cylinder deck as well, as the leak could result from imperfections there. Make sure both sides are squeaky clean before you assemble the new head gasket, then install the head and tighten the head bolts to specification. Absent specific instructions, I would tighten in a star pattern, in stages to draw the head down evenly. First to 50%, then to 100% final torque.
