You need to take all the documentation for the bike you're trading in - V5, MOT certificates, service history, manual, warranty bumph, paperwork for alarms, datatags or anything like that. Everything that the next owner is going to need.

When I traded my CB in I didn't have to fill in any V5 stuff, seems the garage leave them in the name of the previous owner until they're sold. Not sure how that works now with the more strict SORN rules, but I guess you have a receipt proving you traded it in so you're in the clear whatever.

Takes a few weeks for a V5 to come back from the DVLA, could be why they don't bother filling them in if the bike's expected to sell. You should fill out the one for your new bike and really the shop should send it away, though they may well leave you to do that. You get the little green section in the meantime, which can be used if you need to tax the new bike.

When i traided in my scooter i took all of the paper work i had with me. The guy in the dealership showed what i needed to fill in on my old V5. He filled in the info for my new bike and gave me the little green bit off of the bottom of that V5, about 2-3weeks later i got the new V5.
If you have recepts for work and stuff like that you might be able to use them to get a better traid in price.

Sorry if I've missed it but does that mean you've passed then?
