Exhaust refers to the system itself and OE (Original Equipment) saying that manufacturer make a compatible replacement to the original one that was factory fitted, but now it's becoming more made up of interchangable parts ie an end can/slip on for modern street bikes and racing bikes.

Silencer = Muffler: the section which houses the perforated area seen inside along with other materials making it up to absorb the noise of the explosions coming from within engine

Restrictor Baffle = It's the end part that actually sticks out at the far end ex. https://www.cbtimports.com/stntnrestrictor.htm

Collector = It's at the point where all the gases from the engine are collected from the downpipes prior to reaching the muffler.
