My nsr need a chain and sprockets is it better to stick with the original ones with 14 teeth on the front and 38 on the back or try and get the bike top end up by 15 on the front and 36 on the back.

That would be a fairly large change. Rounding current top speed down to 90 (makes the maths easy), that gearing would give you almost 102mph at the same revs in top (if the bike would pull them). Probably would not be bad moving off, but would be a bit of a pain when trying to make a reasonable getaway on a hill (ie, when you are just trying to keep in front of cars, not take off as quick as you can).
I would say go for one or the other.

1) Yep, its always good practice to change the sprockets and chain as a set.
2) There should be a split link on one of the segments of the chain. Look out for an elongated 'c' shaped clip on the link. Pop this off, and pull the flat bit of the link away fro the chain (when i say pop, I had to batter my last spring clip off with a screwdriver, but you get the idea ).
If you cannot see a split link, then your chain may be permanently riveted in place, and you will need to beg, borrow or steal a link extractor from somewhere.
