As i understand as your riding along slow down, then switch off your engine, pulling in the clutch of course, it is used to see what colour the plug is whilst riding.

Don't slow down, ride it under load then hit the kill switch and the clutch at the same time, letting it just slow down can give a false impression when you look at the plug i.e. darker and oiler.
You're looking at the condition of the plug to give you an idea as to how it's performing. Have a look in any Haynes manual and it shows you the various states of plug.

The idea is to get an idea on how the bike is running at certain RPM's. So if you want to know what its like at 5,000rpm you ride at the constant 5k revs (for as long as Poss) then hit the kill switch and pull in the clutch. When you take out the plug the colour of it will tell you if its running lean, rich or just right.
