I believe just some radical vegitarian/vegans who might object to rennet used to coagulate the milk. This can be sourced from the stomach of slaughtered new-born calves. However, there are fungus derived stuff that does much the same for making vegitarian cheese.

I believe it's something to do with the calves only being fed on milk before slaughter (although willing to stand corrected if anyone knows different).

Alpenzeller: nice swiss cheese, no holes. quite sweet with a dry aftertaste

Cambozola: a blue brie (best of bothworlds)

camenbert: long standing favourite

wensleydale: the proper stuff from the Wensleydale valley. None of that supermarket nonsense.
