When you ride at a track day, are there photographers there that take pics, or does one have to rely on my GF with her shaky hands to try and capture the moment on a dodgy digital camera?

There usually are a small team of photographers that the track day organizer arranges to take photo's, charges can vary for that.

Yep, as Davo says there's normally at least one photgrapher. Most will shoot digitally and let you see them before committing to buy at a cost of £20-30 if you want them all putting on CD. Normally expect to get around 10 pictures from the day.

It would be Brands Hatch, only 20 odd miles away from me.

Theres plenty of novice sessions in the near future. Just blown all my money on planning my wedding Embarassed So, it would'nt be until Easter time.

I think from reading previous threads, Brands is quite hard to master? What makes a track hard or challenging?

I don't think it's hard. It might be hard to get right, but it's quite easy to get going at a reasonable speed (IMO) in comparison to some, because it's quite short and you have less corners to learn (I assume you're talking about the Indy circuit).
