Dear Auntie BCF...

I curremtly live on my own, in a house share... (So not really on my own, but you know what I mean)

It's not new to me, but I used to eat crap every day (Micro meals etc)

I'm getting really pissed off with food, because all I'm eating are chicken stir fries (With spices) and making sandwiches/wraps with the remainder.

Basically I need to make stuff that...

Doesn't take a lot of effort after work (I get in at 6.30, and I'm knackered)
Is reasonably cheap (Although I don't like scrimping on food)
Will use ingredients that keep for a while
Is quite spicy (I have lots of spices already, but would rather not be required to build up an armoury of things I'm only going to use once Smile )

Any suggestions?

take a food bag and put it on like a glove

then take a handful of beef mince and form it into a ball

then flatten it out to make a burger

heat up a frying pan until it is hot then put the burger in and cook for about 2 minutes on each side

while this is cooking, pop 2 pieces of bread in the toaster and lightly toast so it just starts to lose the white

for the spicy bit, you have chilli ketchup

the chilli ketchup needs to be made in advance

you get 3 or 4 dried chillies and crush them up and put them in the ketchup bottle and shake. Leave it about a week and the ketchup becomes spicey

you can use chilli powder but its not as good

im not sure whereabout in liverpool you are, but in town on bold st and in chinatown there are shops that sell proper dried chillis

you will be able to use the chilli ketchup on anything to make it more interesting

I also like half a raw onion on my burger too but im not sure you'd like that.

I can also give my recipe for a simple pasta sauce if you like but this will involve more instructions and wont be so easy to follow and get right.

I'm not too far from the Chung Wah, and I live near Smithdown Road, which has some pretty 'ethnic' stores.

Spagetti

Pot of sauce stuff

Mince

And then add what you want, i add Jalapino's and sprinkle on parmesan

All cooked in one pan and can be put in the fridge for snack later.

Omellette, 2 large eggs, a dash of milk and seasoning.

Heat up frying pan and pour in mixture.

Cook both sides evenely then cover the top with grated cheese, tomotoes and ham.

bung under the grill to melt the cheese then fold the beast over. Serve with beans.


Cans of soup with bread rolls are a tasty quick nutrious meal.

Pasta with green pesto, ham and grated cheese with an oven made kiev is another favourite quick meal of mine.

Chilli con carne- brown the mince, through in whatever veg i.e pepers, mushrooms tomatoes, hoil in the sauce and serve with rice.mmmmmmm

Spag bol as killa said.

Bacon when bought in a family size pack ( 24 rashers ) is dirt cheap and will keep in your fridge for a month. With this mind have a go at this:

Carbanara ( ish )

Heat some oil in a pan with way too much dried chilli and garlic.

Drop in 4 rashers of bacon. When it's getting firm, start chopping it into pieces with a pair of scissors, whilst still in the pan ( avoiding burnt fingers etc ).

Throw in some chopped mushrooms and onions.

Boil some pasta ( not the long stuff, too much of a fuck about ).

Pour a pot of single cream in with the bacon. Let it simmer until your pasta is done. Add the pasta to the bacon mix and give a good stir about.

Enjoy with a bit of parmassean cheese on top.

Dont know much about the different meal's (useless at cooking) but even buying ingridients (i.e. veg & meat's) from M&S work's out cheaper per meal then buying ready meals/takeaways.

Tesco should be the batchelors choice. However, there is a strict dress code of shell suit and loafers, screaming brats are still optional. Smoking a massive John Player Superking, whilst waiting for a cab outside is soon to be compulsary.

I have been buying for a family of 4 and getting away with £35 including toothpaste and all that crap for the last 2 months.

If you put a lump of coal up my arse in two weeks, you'd have a diamond.

my normal cooking stuff is made up of....

stir fries with various sauces (chow mein, szechuan, etc) and various "fillings" (king prawn, chicken strips, veg)

macaroni cheese but I chop and fry some bacon and onion and toss that in before baking it in the oven with cheese on top for a bit so it comes out nice and crispy.

pasta bakes, pasta, cheese sauce, brocolli and chicken is a good combo. again oven and cheese on top.

steak (rare) and chips/wedges/curly fries

curries (jar of sauce and some meat) with rice. for an alternative, use cous-cous with a squeeze of lemon juice and some currants thru it for a "moroccan" feel.

kedgerie (sp) boil some rice, hard boil a couple of eggs, chop and chop and lightly fry an onion. get some smoked fish (i use smoked mackral) and break it up, and mix it all up together.. nice and sticky, almost like a risotto.

omlettes, preferred filling is cheese and ham

chili: mince, chili powder, onion, tin of chopped tomatoes, kidney beans and mushrooms. put the beans in last otherwise they disintegrate. serve with boiled rice or tacos.

baked potatos ideal for when you've got left over curry/chillie/spag bol. 9 mins in the microwave and a few mins in the grill to speed things up.

fail safes for me when I'm peckish anc can't be botherd to cook are...

toast and pate with some salad.
tuna mayo toasties
toast with a tin of mackrel in tomato sauce mashed onto it
caesars salad with some fried and copped bacon thru it

i dont think soured cream would work.

personally I would keep it classic so no dried chillis and no garlic

but get a proper pepper grinder and whole peppercorns. all your spiceyness can come frome grinding that about 20 twists into the oil and bacon

i do it a bit differently in that i do the bacon and oil, whisk 2 or 3 egss into the cream in a glass, put the cooked and drained pasta in with the bacon, stir it around, turn off the heat,pour on the cream and eggs, stir them around. The eggs and cream cooks with the heat of the pasta.

I know about bold street because I was a student in Liverpool for 4 years.

I'm in the same situtaion as you, at the weekend my parents bought me a recipe book, '1000 classic student recipes'. Its great from what i've read so far. Tonight I tried my first non-radioactive meal (micro meal).

Diced beef stir fry, with noodles. not bad but the noodles were undercooked and the veg a bit burnt, but as my dad has told me, keep trying and experimenting,pracrice makes perfect as they say!

Give that book a look, well worth the £7!

a quick home made cheese sauce BTW....

melt down a large knob (oooo-er Laughing ) of butter or marg.

Once melted mix in a desert spoon of flour so the flour completely dissolves into the marg and makes a paste like substance.

Mix in a little milk and put the pan back on the hob, stirring continually.

Keep stirring and adding milk(slowly) whilst on heat. As the mixture heats up you'll find that it thickens into a lovely creamy white sauce. You should only need between a half and a full pint of milk.

Don't boil the mixture BTW

Add as much grated cheese as your heart desires and you get a fantastic creamy cheese sauce which takes under 5 mins to make!

The clever part is cos you mixed the flour into the marg at the start the sauce doesn't get lumpy at all....hooooray! Laughing

id agree with that last one but pls dont use marg, use butter

you can use that cheese sauce on cooked and drained pasta, put a bit of cheese on top, put it in the oven to toast the cheese and its maccaroni cheese

if there was no butter, id just use the grated cheese, and stir into he pasta. bit by bit i'd add some of the pasta cooking water to make a rich creamy sauce

Cheap meal!

Frusili Pasta 34p
Homepride Pasta Bake creamy tonato with herb sauce about £1
Some slices of pepperoni from the Delicatessen counter (optional about 30p)

Homepride Pasta bake sauce doesn't require you to cook the pasta before putting it in a cooking dish, therefore just chuck the pasta in the dish, about a glass of water, then the sauce. Cook for about 30 mins, take out stir and put on pepperoni, cook for another 20 mins.

No effort, a bit of wait, but i'm sure there are plenty of things for you do to in 45 minutes and you will have a healthy and filling meal, pasta will make sure you don't feel hungry for ages due to it's starchy nature.

All for less than £2, there is more than enough for 2, can even stretch to 3 people. But if you are solely eating it, you can store in a lunchbox and leave it in the fridge and just reheat.
