I presume you mean 125 series run in Ireland, not England?

I can get you details of an Aprilia 125 series in England.

Why specifically Aprilia 125 racing? Minitwins (Bemsee) or DesmoDue (New Era) is a good cheap introduction to racing on lower powered bikes

Bemsee do Yamaha Past Masters as well, which should be a fair bit cheaper than minitwins (and RS125s as well, probably).
Also MZs.

Can't help in relation to irish racing though, I'm afraid.
