How would this work? If I bought two really old, cheap, ultra low insurance group bikes, and then insured them and left them in a garage all year, would I have two years no claims after the year is up, or does it not work like that?

No, it doesn't work like that. You only get 1 years no claims regardless of how many bikes you own. So to gain 5 years ncb takes 5 years i'm afraid.
