air/fuel mixture i think

First of all i apologise for my ignorance, first time bike rider not clued up about the mechanics.
The problem i have is when sitting at 30mph the bike is sluggish and jumpy but when i open her up runs no problem.
The carb has 2 screws one with a spring not sure which is idle and which is air/fuel.

No matter what you do it'll be sluggish and jumpy if you're below the powerband. Air/Fuel mixture screw should be set as instructed in the manual for the bike, which'll also tell you which screw is which. If it's still lumpy at the bottom end, may need pilot jet changing up or down in size...

If you can't find manual, find out make and model of carb - it'll be printed on it somewhere - then we can find an exploded drawing of the carb itself and instruct u further...
