My blockmate made some absolutely gorgeous chocolate fudge brownies the other day. I want to make some for my girlfriend while I'm back home, but I didn't get the recipe off her.
Anyone got a good chocolate fudge brownie recipe? I'm aware that there are millions on the internet - that's the problem, they're not all good. I've gotten recipes off the internet before, with varying degrees of satisfaction. So I'm looking for a tried and tested one.
Preferably I want one which doesn't require icing on top, partially because I'm not keen and partially because it's just not the way brownies should be.
Karmic love to someone who can provide a recipe which they've actually eaten at some point. |

Come to think of it, she'd probably love hash brownies, but I don't have a supplier or any money.
Come on people, I need a decent recipe before I can start adding secret ingredients!  |

OK. You will need 550g good plain chocolate, 225g butter, 3 eggs, 225g caster sugar, 75g self-raising flour, .5 teaspoon salt, 175g walnuts or similar (chopped), teaspoon vanilla essence, 2 tablespoons strong black coffe (I leave this out cos I hate coffee, use a couple spoons of milk instead).
Chop 225g of the chocolate into chunks (or buy cocolate chips or chunks in the first place, doh) and melt the rest carefully in the microwave with the butter.
In a different bowl mix the eggs, coffe (or milk) and sugar together then beat in the chocolate/butter mix gradually. When it's all mixed in well fold (this means stir with a metal spoon and let plenty of air in, don't beat it) in the flour, salt, nuts, vanilla essence and choccy chunks.
Pour into a greased and lined rectangular baking tin (22x29cm or similar) and bake in a medium oven 190C (375F, gas 5) for about 45 minutes til just firm & crispy on top. Don't overcook, this recipe is for gooey brownies! Leave to cool in the tin, when cold cut into squares and enjoy.
Recipe is from my Good Housekeeping Complete Book of Chocolate and has been tried and tested many times. You can vary it by using different nuts, chucking in white or milk choc chips, maybe dried fruit instead of nuts etc etc.
