Why do the ingredients on the green Peperami read "Pork (108%)"?

Some is wasted in the process of making the Pepperami? I.e. it takes them 108grams of raw pork to make 100gs of cooked meat product?

Just a guess, but seems plausible - could also simply be a typo or a joke!

Nah, I just researched it... it's down to losing water content in the cooking process.

Still, seems odd for them to label it to the public as 108% meat.

its not a typo

the meat is dried, so 108g of meat make 100g of peperami

But it's still 100%

You've got a litre bottle of water, it evaporates to 500ml. You then put it in a 500ml bottle. Does that now make it 200% water ?

No because due to the evapouration process 50% of the water has .........

The 108% of pork is just cause of the higher fat content of pigs.
