Iv just taking out my restriction which was blades and caps on the carbs, but now when its in high revs it keeps holding back. you can feel it wanting to go but then stoping it self. My first thought was that not enough air is getting through, or blocked jets, or do you think my Carbs will need rejeting. Any ideas at all will be a great help.

You need it rejetting. It'll be trying to pull MUCH more fuel than it was whilst restricted. Derestricting nearly ALWAYS means rejet to match.
