Depends entirely on the conditions, angle of shot/bike and the effect wanted etc. At the weekend, I was generally using ISO 200 with shutter priority set to between 1/100s and 1/320s (faster for the head on stuff though).

The camera's a Canon 30D with Canon 24-70mm f2.8, Canon 70-200mm f2.8 and Sigma 120-300mm f2.8 lenses. New camera arrived today, so that'll be getting its test drive at Brands Hatch this weekend... Very Happy

They're racing in Superstocks this year, just not in Superbikes.
