Depends on the model of GPZ and ER5. Some of them have two ignition pickups and some of them have just the one.
So, the rev counter will either read correctly of it will read HALF the true reading.
They will almost certainly NOT plug straight in. Even different models of GPZ aren't interchangeable in that respect, I put a '95 GPZ clockset on a '91 bike. The connector blocks were the same shape but the wires were different colours and in a different order. I sat with a watchmakers screwdriver and carefully removed the terminals from the conector block on the clocks then put them back in in the correct order for the one on the loom.
Speedo should be OK.
In short, it is do-able, the wiring takes a wee bit of fiddling (not too bad if you have the diagram though) and the tacho MIGHT read half what it should.

On a secondary note, rather than fitting the round headlight to the forks, you might want to look into retaining the front subframe (or parts thereof) and fitting some sort of light to that. A wee flyscreen and you could probably retain the original clocks too.
If you retain the front subframe, this leaves the option of fitting a set of twin spots designed for a car, makes the bike look really evil and bug eyed. Citroen 2CV headlights are pretty cool and have cibie reflectors in them.
Here's my old one with the original clocks and a cheap shite teeny headlamp fairing attached to the front subframe.

Just to go into a bit more detail. I removed all the wires on the clock side from the terminal block (that's what took most of the time, its a fiddle) and labelled them all with bits of masking tape eg, backlight; earth; temp guage; beam indicator; left flasher repeater etc.. You can pretty much see what's what when you have the clocks in your hand.
I then sat with the wiring diagram for the bike and checked which wire in the loom should connect to which wire on the clocks. Luckily my connector blocks were the same shape and size. If they aren't, you'll need to chop both off and replace them with either a new connector block or individual terminals. ____________________ “Rule one: Always stick around for one more drink.
