How the hell did Aprilia get a 2 stroke 125 to pass the Euro 3 emissions. Obviously fuel injection and a catalyst but what else? It is quite an achievement.

Fuel injection??? I could have sworn that they are still carburated???

I guess to pass the Euro 3 emissions the bike is heavily restricted via:

CDI (difficult to derestrict newer models)
Exhaust catalyst
Powervalve blanked off (although this may be to do with the ?15hp? license restriction of CBT riders?)
Possibly carburated slightly lean (not sure on last point)

Give it a few years and I suspect they'll get overtaken by the 4t 125's in sales (isn't the r125 one of the best selling bikes at the moment?) and leglislated to extinction.

The powervalve blanking is to done with the 15bhp restriction, although it does have a part to play in emissions, but that's not the reason why it's blanked, it'll still pass with the valve in.

The newer ones are heavily restricted on the CDI, hence the older ones are quicker in stock form than the newer ones.

It must be fuel injected. If the CG can't pass the emissions a smelly carbed 2 stroke definitely won't.

No, it uses a carb, no FI here. Thumbs Up

Remember the CG doesn't have a cat.

It is carbed, but I think it uses some electronic controls on the carb.

Being water cooled probably helps it a bit too.

What I want to know is why this tech couldn't have been used on the RS250?

Not sure but think the requirements are different for smaller bikes. But also the requirements are based on the amount of various emissions per km travelled. The 250 processes a load more air / fuel to travel at the same speed, and likely that although the percentage of the nasties in the exhaust are the same there is just more of it.
