Easy answer to this one.
Setting off
On your test, amber means double blindspot check (in town areas), thus when you have done this, and set off, it'll be green anyway.
Don't worry about holding up traffic on your test anyway, the examiner will be sat right behind you.
Slowing down
If it's amber flashing (ie go when noone crossing) make sure you slow down and check visibly.
If it's solid amber when you approach, slow down, and wait for green. by the time you've slowed down it'll probably be green anyway, so just mirror and carry on.
