If you don't finish it, you can always use it for cooking with.
Cool Thumbs Up
Keeps for months and REALLY it doesn't actually "go poison" Laughing

Slosh it over a steak, or in some pasta sauce (PROPER pasta sauce, not that bottled/packet muck).

I've got this red that comes in a carton, it's been open (the plastic cap thing fell off) and so I've kept it in the fridge with some clingfilm over it, tastes the same 2weeks later, but then i'm not exactly a wine connoisseur. If it's corked it'll last for ages.

White wine resealed and in the fridge - about a week before you'll taste any odds (if it's a reasonably good bottle)

Red wine, personally I don't keep it any longer than a couple of days, other than for cooking with.

I have a spay can of CO2 that you shoot into the open bottle to drive out all the oxygen. Then you just seal it tight with something appropriate. I use those little expanding rubber bungs.

This is supposed to allow you to keep opened bottles drinkable for weeks. The trouble is that I’ve never been able to test it because wine rarely lasts more than a day (hour more like) in my house. Embarassed

Opened wine won't stay fresh and nice-tasting for more than a few days unless it's a box of wine, in which case it'll keep for up to 6 weeks.

My advice is that if you don't want to drink it after a period of time, just put it into an ice cube tray or bag and freeze it. It'll turn into a slush and will be perfect to keep for months for cooking with (not recommended for drinking afterward though).
