Keeping the fizz in sparkling wine ?

G'mornin.
The other night Mrs Stalk opened a bottle of sparkling wine (champagne style wired cork) and had a few glasses, half bottle left over. At bedtime she dropped a spoon, handle first into the bottle so that it hung in the neck of the bottle, "Because it keeps the fizz in" and put it in the fridge.
I was sceptical too say the least and I did take the piss a bit.

Two days later she retrives bottle from fridge, pours a glass and proves to me that the fizz is not only still there but is as fizzy as a fresh bottle, leaving me a bit puzzled as normaly carbonated drinks would have gone flat without a bung in the bottle to keep the fizz in.

So, is there a simple reason, or is Mrs Stalk using voodoo magic?

Help me here as I am scared that I married a witch!

Nah, its a myth.
Its a case of the colder the liquid ( in a cold fridge is good ) the harder it is for the gas to come out of the liquid. When you try to pour warm sparkling wine, it fizzs up real easy. when its very cold, nowhere near as much fizz. Also, the colder the liquid, the less pressur required to keep the gas in.
It WILL have lost a little fizz over that time, but sparkly wine has over the top co2 in it anyways, giving lots of reserve for two days later Wink
