"Streetfighter" style bikes, what are they like to

Hi all!

Im seriously considering buying a streetfighter type bike next, the usual race rep thats been binned, fairing junked, straight handle bars, custom headlight, jackup kit, etc.

Im not after a discussion what makes/doesnt make a streetfighter, i dont care, what i would like is opinions on how these bikes ride compared to their previous lives as race reps or whatever.

IE i assume the straight bars effect things, are they comfy? do they handle ok? jacking up kits must make a difference too? I guess wind blast is pretty bad considering the upright seating position/lack of fairing? Are they reliable with them being messed around with (im a mechanical spaz).

I know riding one would be preferable but that isnt an option, none nearby for sale etc.

For reference ive been road riding for about 15 years off an on (more off than on), after something different having done the blade/gsxr/zxr route years ago... fk all that now lol... i diced with death once, fk all that bullshit again. Plus im on a budget.
