Never ran over anything yet. I would make the effort to avoid it if I could do so safely. Came close with a dog on 2 occasions. Once in the car out in a backroad at night going 60mph. Seen it running out just ahead of me as it was white. Managed to stop just over where it was standing. Luckily it managed to jump back away from the car. I'd have felt horrible forever if I killed it.

The 2nd time was only a few weeks later but on the NSR this time. Again at night but going 30mph through town. Stupid owner had about 5 dogs with him all without a leash walking down the main road and they were running around uncontrolled. I was just passing a van and hadn't seen them, when one ran out infront of me at the other side of the van. I somehow managed to stop really quickly and the dog managed to run backwards from me as I was braking which helped just that last bit of distance.

What's meant to happen should you run over and injure or kill a dog?

You must report it to the police. If you hit cattle, horses (inc donkeys), pigs, sheep, dogs or goats it must be reported, anything else you can squash without worrying (if I remember rightly).

A friend hit a cow many years ago. The bike was pretty trashed, but the cow just gave him a dirty look and wandered off.

If you've ever seen the videos of Volvo doing testing on their cars for hitting elk, you'd slow down for them... I guess the front of a bike is higher than the bonnet of a car, so it's not exactly the same, but elk have legs just the right length to break and let the body go sliding straight up over the bonnet and through the windscreen. Quite similar to underrunning the back of a truck.

edit: apply elk to cow, just lower body.
