The rubber seal that goes between the carb and the piston head, what would this seal be called?

Held in place by jubilee clips (that's excepting the stupidly tight fit they were could be) and generally the bit where restrictions are put in (between the carbs and the head of the engine)?

Engine manifolds (so i've been told).

yea that it called inlet manifold goes betwqeen the carb and the cylinder head.

usually called carb rubbers on a bike, they don't really constitute a manifold in the strict sense of the word!

"Carb rubbers" could be misconstrued as it could either mean the one between the carb and the engine or the one between the airbox and the carb.

Different manufacturers will have different names for the part. Honda call them "Insulator, Carb.".
