If you're on Windows XP then backup the whole of the 'Documents and Settings' folder on the root of the main hard drive. This should not only get all of your documents (since each user's "my documents" folder is inside this) but also the settings and private data of all 'well-behaved' applications.

Note that to save backup space delete all temporary files and internet cache documents before backing up.
