I was driving between 40 - 50 mph down the A13 for 3miles and came to a redlight stop, during that stop there was a whole load of smoke coming out from the exhaust. Why is that?

Its a derbi gpr 125cc 2stroke. Smoke was white.

possible headgasket failure, assuming its watercooled?

White smoke can generally be excess steam = water

Check your coolant level.

Yes its watercooled. Can't seem to located my coolant level, any help? (Noob)

may need to take the front fairing off. (if any)
check your oil level as well.
does it feel like it has lost any power?

I took the petrol tank fairing off and revealed the water coolant lid. The water level was below MIN marker, topped it up.

You think this could have been the source of the problem from white smoke?

I had this same problem, and I think it might have been because there was gear box oil getting in to the cylinder, maybe the oil seals have gone?

Did you manage to sort your problem out? Was it the oil seals? If so, what did you do to fix it?
