Look closely and it goes down again immediately.
The trick is quite well known but is mainly to get the initial seal in a tubeless tyre.
You then need to inflate it quick.

Sometimes the off roaders run at extremely low pressures for more grip (sand, some types of snow) - you might just get away with no more air then.
