Sprouts

I just found out what Brussels sprout is in Urdu It had become an obsession as none of my Urdu speaking friends knew the word. I love sprouts and add them to things like Sag Aloo.
Has anyone got any decent sprout recipes? I see Hestom Blumenthal recommends taking all the leaves off and then cooking but that would take hours. Let us talks spouts ( بِلجِیَم میں اُگنے والی گوبھی ۔)

Any idea of why you must cut a cross on the stalk, is it for a sound practical purpose or just some Christian bunk?

i recommend sprouts fried with bacon, but unfortunately you are a veggie

definitely try quartering them and frying them though maybe with some finely chopped onion and passata, brings out the flavour

i serve mixed into pasta

only takes a few mins for them to go a bit soft so you dont need to fry them long

I love sprouts

I tend not to boil them within an inch of their lives, as I don't like them soggy, so I put them in as little water as I can get away with to not burn the pan and they sort of boil and steam. That's for going with roast or like I had last night with faggots and mashed new pots! I like them in bubble and squeak too!

I often used them sliced in coleslaw - my winter coleslaw has red cabbage, white cabbage and finely sliced sprouts with finely sliced peppers and onion and homemade mayonnaise.

If you suffer from the parping after effects of cabbage or sprouts add a sprinkle of caraway seeds, as they are known to negate the dreaded wind! Quite a distinctive taste which might not go with the other stuff you're eating so test first!

When I worked in a pub, I had to prepare the sprouts for cooking.

I don't think I have been nearer to suicide apart from when I had to peel about 2000 onions for pickling.

Best way to cook is.

Take outer leaves off,
cut the cross bit
Steam them till cooked
into a hot pan with some butter in, toss them around in there for 2 minutes, add bacon.

I had them in a stir fry tonight, I always par cook by steaming but as i was in a rush I forgot the little cross.
Result..... no difference to the ones Ii cut. Save yourself the grief and do not fall for the Christian sprout cross conspiracy.
