Been quite a few 'DIY' attempts at such things.
The car ones to some degree make more sense because they use gravity to simulate the acceleration forces - as in a car you only have four basic accelerations. Though of course they don't tend to go to the one g and you'll still get some

In a plane, of course, there's a lot more eventualities, so even harder to get near replicating.

Still, be interesting to have a play in one Smile.

would be the tits if they made one for games like MotoGP with bikes that you sit on and when the front end comes up in the game, it does on the sim Razz

Except that'd be even worse 'feel' wise, because cornering just feels like a bit extra G.
Note you can get static wheelie 'simulators' (well, basically the real thing). They use a braked drum like a dyno (possibly do use actual dynos), then lock a bike's rear spindle above it.
