Can I tax my car with New Keepers Supplement, MOT and a cover note for the vehicle from my WIFES insurance. I can't see a problem, because the vehicle is insured, but not by the registered keeper ( me ).

No the vehicle must be insured on its own policy

You can as long as the car to be taxed is actually the insured vehicle. It must have the cars details on the cover note.

If the car has it's own insurance policy (i.e. a policy in your wife's name) it dunnay matter whose name is on the V5.
