They probably see it as grooming rather than stroking, most animals will groom each other.
Plus there's the domination/submission thing going on with dogs, whether you like like it or not, you are part of the pack.
How you interact with the dog determines your position in the heirarchy, in the dogs eyes.

recent study showed both dog & owners became more relaxed and slower heart rate
when stroking / patting there pets, but basically its the pack instinct and need for contact
that we share with dogs
