Well, the reason I did the DAS was because the DVLA laws changed and people like me who slipped under the net and were riding around without full licences, were caught up in the new CBT laws and advised to take the test immediately (1997).
Both me and my friend had many years of bike riding, as well as many years of car driving, but both opted for the three day DAS which included CBT and full test on the fourth day.
I couldn't tell you how well you ride (or think you are), but it's best to consider the costs. If you have to do it all over again, it's going to be costly...  ____________________ Be who you are and say what you feel, because those who mind don't matter, and those who matter won't mind - Dr. Seuss

I've been driving 10 years, and took to the bike quite quickly when I did my CBT.
The instructor thought I'd need about 18 hours of training.
Instead I got myself a 125, practiced a few days a week, and did the restricted tests myself, within 2 months.
Just this weekend I've started riding a restricted 600.
I would say it feels quite different to the 125, the turn feels different, feels heavier etc
I would expect another 1-2 months before I pass my unrestricted tests.
In summary, I'm in a similar situation to you in terms of having lots of road experience. Indeed, that isn't the issue for me, as I needed to learn balance and control on the 125, and now balance all over again on the 600.
I think it could be a struggle to pass the DAS in just 3 days, if the 3rd day was your test.
MOD1 will be the hardest in my opinion, one foot down and you're stuffed!
Well worth just having 1 lesson though. Although I doubt you'll be allowed higher than a 125 on your first day if you haven't done gears before.

Do you have access to a 35kW bike on which to sit the test? If not, then you'll be largely at the mercy of whichever training school you choose to go with. ____________________ Biking is 1/20th as dangerous as horse riding.
