Lamb is already cheap if you live in Wales and know what you're doing with a pen knife Laughing

Last year was lovely at about this time too, then when actual summer came it was shit. So i've not got my hopes up yet.

We had a New Year barbecue a few years back. Started in 2008, ended in 2009.

Had a BBQ in the snow on Christmas eve 2010. Better than a summer one and the snow does a good job of keeping the beers cool.

Then you're doing it wrong!

In the UK we grill on the BBQ. We stick stuff on when it's hottest and burn the outside. Most other countries will slow cook on then after the heat has died down. In the US they can slow cook meat for like 6 hours so it's juicy and just falls apart. Nom.

You're doing it wrong.

When someone asks you how you want your steak done the correct answer is "describe to it the concept of fire". Even showing it a picture of fire renders it overdone.

I BBQ all round with the help from...
https://www.netstate.com/states/symb/championships/images/barbecue_bible.jpg

There is a difference between burning sausages and a proper BBQ, with home made marinades and properly cooked meat.

I use a gas grill charcoal is far too difficult to get the right temperature.

Ask Steven_191 about my Twice Cooked Ribs Very Happy

Meat on fire is good all year round.

Not really into BBQ's though, it all seems a bit civilised. There is nothing quite like perching on a boulder down the beach, pebbles exploding at the base of the fire from the heat whilst and a grill laden with sausages, chicken legs, mackerel fillets and steaks is suspended on rocks over the smouldering embers of a dying fire.

Wash down with some rough west country cider for the full teenage memory lane effect.

For example:

Preferably joined by au jus from hours and hours of very slow cooking.

Also, having lamb/brisket cooked in it's own juices for around 8/10 hours at an incredibly low heat, then made into a French double dip sandwich.

Or ribs that have been smoked for hours and hours on end, then given some dry rub and smothered in a smoky BBQ sauce and cooked on an open pit for a while so the bone literally slides out completely clean.

Awwwwwwww yeah, real BBQ.

At a scout camp a few years back the leaders (once kiddies were in bed) had veal that had been in the embers for a few hours wrapped in tin foil.

Mouth wateringly lovely!

If you attend the BCF BBQ, I doubt you'll surpass Hellraiser Laughing

I tend to give it biggun by challenging the guy in the group who is known to outdrink everyone else, then end up failing epicly. Last time i did this i said 'i'll drink you under the table'. A few hours later i was throwing up, with him saying 'so errr, wheres this table you want me to crawl under?'.
