Ok so I can do my theory now while I'm 20 ready to do the practical tests when I'm over 21. I shall get it booked
The DSA website has the option to book a Big Bike Mod1 and Mod2. Why can't I just have some training and book the tests with out doing a DAS? |

Just so we're clear, "DAS" has no, uh... clear meaning. It can refer to sitting your tests on a "big" bike (35kW+) and there are "DAS" certified instructors, but there's not really any such thing as a DAS course per se.

You're quite right that you can do this, if can find an insurer who will cover you on that bike under your provisional entitlement. It's perfectly fine for them to do so, but many of them won't want to. You'll have to ride bitch down to the test centre, of course.
Depending on how confident you are, and if you have some "private land" available to practice on, you could miss out the training altogether. There's absolutely no requirement to have any training beyond the CBT
