what do you do when a 120psi air impact gun doesn't want to get a front sprocket (bolt) off?

I would use a three leg puller like these

The OP says get the sprocket off - nothing about the bolt.

But - if the bolt is difficult to shift,put the chain back on,put the bike in gear with a lump of wood through the spokes and resting on the top of the swing-arm,hold the back brake on and undo the retaining nut/bolt.

Is there a tab washer holding the nut against the shaft?

Breaker bar, exert as much pressure as you can, while a mate wallops the end with a mallet.

Are you sure you're Unscrewing in the right direction?

Yeah but why would he be using an impact wrench if he's already got the bolt off?

thought it was obvious because of the use of the air gun.
just for clarification, it is the retaining bolt. tried a 5/6ft breaker bar and air gun from a workshop.
it's not my bike, asking on behalf of one of the guys in the university motorcycle club. i haven't had a look or a go myself, but before i start suggesting splitting the bolt, want to know what else to try.

You need to "shock" the nut to break any corrosion holding it in place, hence walloping the end of the breaker bar with a mallet, while the breaker bar is under tension.

just in case anyone stumbles on this; I'm sure you were thinking of a bike with alloy wheels when you wrote this but not a good idea with actual spokes!!
