I'm definitely no expert, with my sum total of about 8 hours riding experience, but he's doing all the things I'm trying really hard to stop doing; pulling the clutch in (fully I assume) before letting off the throttle, chopping down through 4 gears whilst coasting to a stop, at least he says to use rear brake at low speeds!
