Posted: 18:59 - 21 Jun 2012 Post subject: Any Good Tofu Recipes? |
 |
|
Hiya,
There's been a few healthy eating type threads lately and you lot seem to be a good source of ideas so i think it's worth a punt asking you about tofu.
I have yet to cook a tofu dish that i think ticks the taste box. Admittedly all i've done so far is stir-fry it, marinade it in chilli sauce and make it into veggie burgers all of which were mediocre taste-wise. The only good one i've had from anywhere was a kung-po tofu from the take-away down the road when i lived in North London.
In light of doing Chub-Club and tofu being a good low-fat source of protein i should really make the effort to include more in my everyday diet.
So any good recipes out there? Ideally no deep-frying before-hand in light of me being a fat-bird at present.
Also, i'm not a vegan (so i eat dairy, eggs etc) but i am a vegetarian (so nothing with a face). This eliminates a lot of thai pastes as they seem to all have fish hiding in them somewhere ____________________ smile and be happy. . . .it gets right on everyone's tits! |

1. Take a block of tofu and into 1/2" cubes.
2. Place Tofu on a plate.
3. Scrape the contents of the plate into the bin.
4. Cook a steak and enjoy it.
Only joking!
Mum cooks me this (well something very similar), she is veggie and I enjoy it!
Sichuan Tofu with Garlic Sauce
1 pound firm or extra-firm tofu
1/4 cup warm vegetable broth
1 tbsp. Shao Hsing wine, or dry sherry
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon freshly ground black pepper (up to one tablespoon)
2 tablespoons rice vinegar
2 tablespoons black rice vinegar
2 tablespoons reduced-sodium soy sauce
1 tablespoon Shao Hsing wine, or dry sherry
2 tablespoons agave nectar or sugar
1 teaspoon chili garlic paste (up to 2 teaspoons)
1/4 teaspoon sesame oil
6 large cloves garlic, minced (up to 1 head)
2 tablespoons minced fresh ginger
1 bunch spring onions
8 fresh water chestnuts
2 tsp. cornflour dissolved into 2 tsp. water
Cut the tofu widthwise into 1/2-inch slices. Then cut each slice widthwise into 1/2-inch by 1 1/2-inch sticks. Put the pieces in a ziplock bag and add the vegetable broth, 1 tbsp. wine, and 1 tbsp. soy sauce. Let it marinate, turning the bag every few minutes, while you prepare the vegetables and sauce.
In a small bowl or measuring cup, mix together the vinegars, 2 tbsp. soy sauce, 1 tbsp. wine, agave nectar or sugar, chili garlic paste, and sesame oil. Set aside.
Peel and slice the water chestnuts and cut each slice into shreds, about three pieces per slice. Slice the green onions thinly, separating the dark green tops from the light green and white parts.
Spray a large non-stick skillet with oil, and heat it over medium-high heat. Add the light-colored scallion slices, the garlic, and the ginger, and stir-fry for 1-2 minutes. Remove from the skillet and set aside.
Spray the skillet again, and add the tofu and its marinade to the pan, making sure the tofu is in a single layer. When the marinade has evaporated, carefully turn the tofu (which should be light brown on the bottom) and cook the other side until brown. Add the green onion mixture back to the pan and cook, stirring for another minute.
Add the water chestnuts and sauce and bring to a boil. Add cornflour and water and simmer until thickened and glossy. Remove from heat and garnish with green onion tops. ____________________ Quietly and consistently taking the piss.

I think you will find the words good and tofu are mutually exclusive.
Joking aside IIRC from my veggie daughter the trick is to find a decent marinade for the tofu as that is the only thing that gives it any flavour/taste. That would tie in with mr_fisty's recipe above.

HK i guffawed at that
Map, thank you. I eat the quorn stuff quite a bit too. The quorn pieces are yummy. I've not tried many supermarket ones but i did try the morrisons ones and they were minging
Tiny Cornish eats meat but even he likes some of the veggie bits. I gave up making him meat bolognaise as even with decent mince from the butchers he prefers the quorn mince one - which saves cooking two. wooo hoooo! ____________________ smile and be happy. . . .it gets right on everyone's tits! |

In case anyone wants an edible tofu recipe (apart from Fisty's one which i will be making asap) i found lots of tofu chocolate cake recipes online. I don't want to be shanked with a pointy rice-cake so i wont be making one till i'm finished at Chub-Club, but if anyone's not on rations, they look yum

That dog won't hunt. Look, your first post in this thread was basically "how the very fuck do I make this stuff even vaguely palatable" so don't try and make us think there is even a remote chance of it being nice. You know my ex was vegan, she had ten years to make something that I found edible and never managed it ____________________ I'm immortal. Well, so far. |

Having been to China a few times, the tofu there is awesome.
I think in the UK it's such a rare food, its never done properly, and its rare to find good stuff. It is true it can be tasteless, but I really enjoy it when made properly.

The tray infront of my silver cooking bowl was a selection of tofu, it was about £1.50 and had so many types I never knew existed, soft, hard, noodles, and my favourite which was crispy on the outside and like bread on the inside.
I don't know any good recipies though, but theres alot you can do with it! ____________________ Currently Riding - 2002 Aprilia RSV1000 Mille |
